Chocolate fridge tart

    sponge fingers
  • 250
    g
    marshmallows
  • 200
    g
    milk chocolate, broken into squares
  • 375
    ml
    milk
  • pinch salt
  • 375
    ml
    cream, stiffly whipped
  • 30
    ml
    lemon juice
  • 10
    ml
    vanilla essence
 

Method

 
Spray a 30 x 21 cm pie dish with non-stick spray. Arrange a layer of sponge fingers in the bottom of the dish. Place the marshmallows, chocolate, milk and salt in a saucepan and stir over low heat until melted. Mix well and cool in the freezer. Mix the cream, lemon juice and vanilla essence together. Mix well with the chilled chocolate mixture and pour over the sponge fingers. Place the remaining sponge fingers on top and leave in the fridge for about 6-8 hours until firm. Alternatively, leave in the freezer until set, but do not freeze. Makes a medium fridge tart.
