Chocolate bread pudding

    milk
  • 150
    ml
    Nestlé Ideal Evaporated Milk
  • 50
    ml
    castor sugar
  • 5
    ml
    vanilla essence
  • 3
    large eggs, lightly beaten
  • 200
    g
    crustless white bread, cut into cubes
  • 10
    ml
    baking powder
  • 5
    ml
    ground cinnamon
  • cardamom pod, seeds crushed
  • 100
    g
    dark chocolate, grated
  • 60
    ml
    butter, cut into small cubes
 

Method

60-90 minutes
 
1. Mix together milk, evaporated milk, sugar, vanilla essence and eggs. Pour into a bowl and add bread. Leave to soak for 20 minutes. 2. Stir baking powder, spices and chocolate into the bread mixture. Spoon into a greased 1,5 litre ovenproof dish. Dot with cubes of butter and bake in preheated 170 ºC oven for 60 minutes until firm. Serve warm with ice cream or fresh cream.
