Choc-Hazelnut Shortbread

    butter
  • 220
    g
    castor sugar
  • 260

    cake flour
  • 35

    cornflour
  • 20

    cocoa

    g
    hazelnuts, one half crushed, the other coarsely chopped

Oven temperature: 140°C
1. Beat the butter and castor sugar. Sift the dry ingredients and add to the butter mixture, along with the crushed nuts.

2. Knead to form a smooth dough, then press into an ungreased baking tin. Prick the surface all over with a fork. Sprinkle the coarsely chopped nuts over the surface and press lightly. Bake in a preheated oven for 20 minutes, then reduce the heat to 120°C and bake for a further hour or until cooked through.

3. Cut into squares or rectangles while still warm. Leave to cool slightly before turning out onto a cooling rack, then leave to cool completely.
