Prepare two minute noodles according to instructions on packet
Heat oil in wok or large frying pan and stir-fry beef until cooked through.
Add onion, garlic and ginger and stir-fry until onion is soft.
Add peppers, baby spinach, bok choy, broccolli, butternut and stir-fry until vegetables are just tender.
Add noodles and toss together.Serve hot.
