Chickpea salad

Time 10 min + 15 minutes standing time

    400g tins chickpeas, drained
  • 1/2
    red onion, finely sliced
  • 1
    large sweet yellow pepper, seeded and cubed
  • 180
    ml
    pomegranate seeds
  • 100
    g
    feta cheese, crumbled
  • 10
    g
    pea shoots
  • salt and pepper to taste
 

Method

 

Mix all the ingredients together.
Let the salad stand for 15 to 30 minutes.
Season with salt and pepper and serve at room temperature.

Serves 4-6.
