Chickpea salad

  • 500
    g
    chickpeas or black-eyed beans, soaked overnight and cooked until done
  • SALAD DRESSING
  • 30
    ml
    olive oil
  • 25
    ml
    grape vinegar
  • 15
    ml
    chopped parsley
  • 2
    onions, finely chopped
  • salt and black pepper
  • black olives
 

Method

 
Drain the black-eyed beans or chickpeas and boil in fresh water until done. Add salt at the end of the cooking time. Drain and chill. Blend all the ingredients for the salad dressing and pour over the beans or chickpeas. Garnish with olives.
