Chicken with olives

    ml
    olive oil
  • 8
    chicken pieces
  • 3
    cloves garlic, crushed
  • 300
    ml
    dry white wine
  • 10
    ml
    fresh thyme
  • 12
    black olives, pitted
  • 1
    green pepper, sliced
 

Method

 
Heat olive oil in a large saucepan and brown the chicken pieces. Add garlic, wine, thyme and olives. Cover and simmer for 25 to 30 minutes, until chicken is tender. Add green pepper and seasoning, to taste. Simmer for a further five minutes. Serve chicken with rice of baked potatoes.
