Warm some olive oil in a pan.
Add 1 medium sliced onion and sauté until translucent.
Add the chicken and stir fry until it is cooked through.
Add sliced red, green and yellow peppers.
To assemble:
Warm the pitas for about 10 seconds in the microwave and slice.
Spread mayo on the one side and pesto on the other.
Add chicken, sliced tomatoes, cucumbers, etc.
Top with cheese.
Toast it if you want.
Slice in halves or quarters wrap tightly in cling film and then in foil
Add to lunch boxes with a few serviettes a bottle of water and fruit of
your choice.
Notes:
Alternative to the microwave, you dampen the pita and pop it in the toaster either whole or halved. The heat helps it open up.
This is an ideal way to get vegetables into their diet - stir fry after
the chicken is cooked.
You prepare this the night before, provided you remove the seeds from
the tomato and cucumber
Replace white pitas for the whole-wheat variety to up the healthy factor.
This is also a perfect way to finish leftover chicken.
It is a good idea to slice these tramezzinis so that they easier to eat
(and they quite filling so for smaller kids just half will suffice!)
