Ingredients (9)

800.00 g chicken — thighs, skins removed
flour — cake, seasoned
30.00 ml mustard — prepared
2.00 apples — peeled, cored, sliced
250.00 ml apple juice — unsweetened
cinnamon — ground, pinch
100.00 ml cream
15.00 ml cornflour
30.00 ml brandy

Method:

Preheat the oven to 180 °C and lightly grease an ovenproof dish with butter or margarine.
Roll the thighs in seasoned cake flour and arrange in the dish, meat side up. Spread the mustard over the thighs and arrange the apple slices between them. Pour the apple juice over and sprinkle with cinnamon.
Bake for 40 minutes and remove from the oven. Pour the juices into a measuring jug and remove the apple slices. Puré;e the juice and apple slices with the cream until smooth. Blend the cornflour with a little water, add the brandy and stir in.
Pour the puré;ed sauce over the thighs, cover and bake until the sauce thickens and the chicken is done (about 20 to 25 minutes).
Serve hot with rice and crisp vegetables.
