Remove the skin from the chicken and then remove it from the bones.
Remove hard skin from lemon grass and chop the inside with spring onions. Place the chicken, coriander, garlic, lemon juice, sugar, soy sauce and two eggs in a blender.
Mix in breadcrumbs with your hands and add pepper and salt for flavour. Form into patties and place in a greased baking tray.
Cover patties/cakes with oil and bake for 30 to 40 min at 200º C, turn after 20 min.
Cut radishes in half and finely chop the chilli and spring onions. Halve the cucumber, scrape out the seeds and cut in slices. Mix the olive oil, lemon juice, mustard, salt and black pepper. Add all ingredients to a salad dish.
