Preheat the oven to 200 °C and grease an ovenproof dish with olive oil.
Gently loosen the skin off each chicken breast and spread 15 ml pesto under the skin.
Pull the skin back over the pesto.
Place the chicken breasts in the dish and tuck a sprig of rosemary under each.
Scatter the garlic cloves over the chicken and drizzle with olive oil.
Roast for 20 minutes.
Remove from the oven and arrange the cherry tomatoes among the chicken breasts.
Roast for another 20 minutes.
Remove from the oven and place one slice of mozzarella on each chicken breast.
Roast until the cheese has melted.
