Chicken and spinach meatballs

Ingredients

  • 1
    kg
    chicken fillets - puréed in food processor
  • 1/2
    punnet mushrooms - finely chopped
  • (you can use the food processor again)
  • 1/4
    cup
    oatbran
  • 1/2
    cup
    onion finely chopped (food processor)
  • 60
    g
    spinach - finely chopped
  • 1
    tsp
    dried mixed herbs
  • 1/2
    tsp
    ground black pepper
  • 1
    tsp
    salt
  • 1
    tsp
    chicken spices
  • 3
    egg whites
 

Method

Pre-heat the oven to 180°C. Spray 2 muffin tins with cooking spray or rub with olive oil.

Mix all the ingredients in a big bowl using your hands.

Roll into balls and place onto muffin tray. Sprinkle with some more chicken spices and bake until golden brown.
