Chicken and mango casserole

    butter

    onion, finely chopped

    mangoes, peeled and diced
  • 2

    paprika
  • 10

    curry powder (or more to taste)

    cake flour

    chicken stock
  • 250

    fresh button mushrooms, sliced
  • 250
    ml
    thick cream
  • 1
    kg
    chicken breasts, skinned, deboned and sliced into pieces
  • salt and freshly ground black pepper to taste
 

Method

 
Preheat the oven to 180 ºC and grease a 27 x 30 cm oven dish. Heat the butter and sauté the onion and mangoes for 1 minute. Add the paprika and curry powder and stir-fry for another minute. Add the flour, stirring until smooth. Add the chicken stock and bring to the boil while stirring. Add the mushrooms. When the sauce has thickened, remove from the heat and add the cream. Arrange the chicken strips in the oven dish, pour over the sauce, season with salt and pepper and bake uncovered for about 50 minutes until golden brown and done. Serve with rice or couscous and a salad or vegetables. Serves 8.
