Chicken and apricot potjie

Ingredients

    packet instant marinade (chicken flavour)
  • 2
    kg
    chicken portions, thawed
  • 60
    ml
    oil
  • 12
    baby onions
  • 125
    ml
    dried apricots
  • 4
    carrots, sliced
  • 6
    potatoes, peeled and cut into chunks
  • 250
    ml
    dry white wine
 

Method

1 hour 30 minutes
 
1. Prepare marinade according to packet instructions. Pour over chicken pieces and allow to marinate for 15 minutes. 2. Heat oil in a cast-iron pot over the coals and brown the onions. Add the chicken and remaining ingredients and cover. Allow to simmer slowly for 1 to 1 1/2 hours until chicken is tender. Serve with putu pap (see recipe).
