Ingredients

    g
    raisins
  • 200
    g
    pitted dates
  • 250
    ml
    water
  • 30
    ml
    butter
  • 200
    g
    brown sugar
  • 180
    g
    flour
  • 3
    ml
    bicarbonate of soda
  • 5
    ml
    cinnamon
  • 5
    ml
    mixed spice
  • pinch of salt
  • cream or ice cream to serve
 

Method

Place the fruit, water, butter and sugar in a large bowl, microwave on high for a few minutes, until boiling.
Stir well, set aside to cool – to speed this up pour the mixture into another bowl and stir regularly to cool it.
Combine the dry ingredients and stir into the cooled mixture.
Pour into a greased dish, microwave on medium/high for 8-9 minutes.
Allow to cool, cut into squares, and serve with whipped cream.
