Chewy chocolate brownies

    pecan nuts, chopped

    toasted muesli

    large eggs, lightly beaten
  • ICING
  • 500
    ml
    icing sugar
  • 60
    ml
    cocoa
  • 50
    ml
    hot water
  • 2
    ml
    vanilla essence
 

Method

30 minutes
 
1. Grease a 23 cm square baking tin and line with aluminium foil. 2. Place the butter and sugar in a saucepan and stir over a low heat until butter has melted. Set aside to cool for 2 minutes. 3. Sift the flour and cocoa together. Stir into the melted mixture, then add nuts, coconut, muesli and eggs. Mix until well combined. 4. Pour mixture into the prepared baking tin and bake in a preheated 180 ºC oven for 25 to 30 minutes, until firm. Remove from the oven and set aside to cool. 5. ICING: Sift the icing sugar and cocoa together. Stir in the water and vanilla essence. Pour over cooled brownies and leave to set. Once set, cut into squares.
