Ingredients (9)

345.00 g flour — self-raising
100.00 g pecan nuts — finely chopped
165.00 g castor sugar
1.00 orange — zest only
2.00 eggs — large
100.00 g cottage cheese — smooth
170.00 ml sunflower oil
25.00 ml orange juice
150.00 g glacé cherries — halved

Method:

Preheat oven to 180 ºC. Mix flour, pecans, sugar and orange zest together in a large bowl.
Beat eggs, cheese, oil and orange juice together. Stir into the dry ingredients. The mixture will be quite stiff.
Divide two thirds of the mixture between 2 greased loaf tins. Place cherries on top of the mixture, making sure they don’t touch the sides of the tin. Crumble remaining cake mixture on top of the cherries and press down gently.
Bake in the oven for 35-40 minutes, or until golden and cooked through. (Cover the loaf with a piece of heavyweight aluminium foil if it starts to brown too quickly.) Allow to cool completely before removing from the tin.
Makes 2 loaves.
