Cherry crumble loaf

    self-raising flour

    pecan nuts, finely chopped

    castor sugar

    orange (grated zest only)

    large eggs

    smooth cottage cheese

    sunflower oil

    orange juice

    glacé cherries, halved
 

Method

35-40 min
 
Preheat oven to 180 ºC. Mix flour, pecans, sugar and orange zest together in a large bowl. Beat eggs, cheese, oil and orange juice together. Stir into the dry ingredients. The mixture will be quite stiff. Divide two thirds of the mixture between 2 greased loaf tins. Place cherries on top of the mixture, making sure they don't touch the sides of the tin. Crumble remaining cake mixture on top of the cherries and press down gently. Bake in the oven for 35-40 minutes, or until golden and cooked through. (Cover the loaf with a piece of heavyweight aluminium foil if it starts to brown too quickly.) Allow to cool completely before removing from the tin. Makes 2 loaves.
