Cheesy seafood gratin

    butter

    onion, chopped

    white fish, filleted

    mixed seafood
  • 5

    chicken stock powder
  • 60
    ml
    white wine
  • 190
    ml
    cream
  • 15
    ml
    cornflour
  • water
  • 30
    ml
    chopped fresh dill
  • 45
    ml
    freshly grated Parmesan cheese (optional)
  • salt and milled pepper to taste
  • breadcrumbs and chopped dill for topping
 

Method

 
Heat butter and sauté onion until glossy. Add fish and sauté for 5 minutes. Add seafood and toss to coat in butter. Add stock powder, wine and cream. Cook for a few minutes. Mix cornflour to a paste with a little water, add and cook for 3 minutes. Stir in dill and 15 ml (1 tbsp) Parmesan. Season. Place in an ovenproof dish, scatter breadcrumbs, remaining cheese and chopped dill over and grill until golden. Serve as a starter with salad, or with rice and salad as a main course.
