0.00 0 mature cheddar cheese
0.00 0 parmesan cheese
0.00 0 nutmeg
0.00 0 salt and white pepper — to taste
0.00 0 flour

0.00 0 lemons — juice only
0.00 0 fresh parsley — chopped

Method:

Preheat oven to 180 C.
Place the fish in the milk and poach in a pan or pot on the stove with the nutmeg.
When it is done, remove it carefully and place in an oven proof dish.
Set the milk aside.
Melt the butter in a pot and add the flour, make sure to cook the flour or it will taste ‘floury’.
Take it off the heat and add the flavoured milk and with a whisk, stir well to prevent lumps.
Season with white pepper and salt.
Add lemon juice and cheese and stir to smooth and silky.
Pour the sauce over the fish and sprinkle with grated parmesan.
Bake in the oven for 10-15 minutes or until golden on top.
Sprinkle parsley over the top just before serving.
Serve with mashed potatoes and peas.
