Cheeseless mushroom and bacon pizza

  • sunflower oil
  • 350
    g
    rindless back bacon, chopped
  • 15
    ml
    mustard seeds
  • 400
    g
    fresh black mushrooms, thickly sliced
  • 4
    plain pizza bases
  • 2
    bunches spring onion, chopped
  • 125
    ml
    oil-packed sun-dried tomatoes, drained
  • salt, milled pepper and
  • fresh origanum to taste
 

Method

 
Oil a large frying pan lightly. Fry bacon until crisp. Remove bacon from pan with a slotted spoon and place on absorbent paper to absorb excess oil. Using the same pan, add a little extra oil if there isn't enough bacon fat, and heat mustard seeds. As seeds begin to pop, add mushrooms and sauté for about 5 minutes. Remove from stove. Mix mushrooms, bacon, spring onions, tomatoes and seasoning. Spoon mixture onto plain pizza base and bake in a preheated 200 ºC oven for 15 to 20 minutes. Sprinkle origanum over and serve.
