Cheese and olive loaf

    ml
    self-raising flour
  • 250
    ml
    mature Cheddar cheese, finely grated
  • 2
    ml
    freshly ground black pepper
  • 250
    ml
    stoned olives, chopped
  • 30
    ml
    finely chopped parsley
  • 4
    extra-large eggs, whisked
  • 80
    ml
    butter, melted
 

Method

35-40 min
 
Preheat the oven to 180 ºC. Spray a 26 x 10 cm loaf tin with non-stick spray or grease well. Sift the flour into a mixing bowl and add the cheese, pepper, olives and parsley. Stir in the eggs and melted butter and mix well. Spoon into the prepared loaf tin and bake for about 35-40 minutes until done or a testing skewer comes out clean. Turn out onto a wire rack to cool until just warm. Serve buttered. Makes 1 medium-sized loaf.
