4.00 ham — slices
1.00 Litres flour — self-raising
10.00 ml mustard — powder
5.00 ml salt
cayenne pepper — pinch
90.00 g butter
380.00 ml milk
250.00 ml cheddar cheese — grated
sea salt and freshly ground black pepper

Method:

Preheat the oven to 200 ºC and spray a round cake tin with non-stick spray or butter lightly. Cut the ham into strips. Sift the self-raising flour, mustard powder, salt and cayenne pepper together. Rub in the butter with your fingertips and add enough milk to the mixture to form a soft dough. Place on a floured surface and knead lightly until blended. Roll out into a 44 x 31 cm rectangle. Sprinkle with the ham and cheese. Brush the edges of the pastry with a little water to moisten. Roll up the rectangle as you would a Swiss roll and cut into 2 cm slices. Arrange the slices in the prepared cake tin and brush the tops lightly with milk. Bake for about 20 minutes until golden brown and done. Turn out, cool slightly and serve warm. Serves 4 as a light meal.
