Ingredients (6)

25.00 g butter
25.00 g flour
300.00 ml milk
salt and white pepper
30.00 g cheddar cheese — grated
15.00 ml fresh dill — finely chopped

Method:

1. In a small saucepan, melt butter. Draw pan off heat and stir in flour using a wooden spoon, return pan to heat and cook, stirring for 1 minute (the flour must not colour).
2. Draw pan from heat and gradually add milk, to prevent any lumps forming. Return pan to heat, bring to boil, stirring continuously with a wooden spoon. Simmer for a few minutes, add seasoning, cheese and herbs. Using a large metal spoon, coat poached eggs (see recipe), and serve with fried smoked trout fillets (see recipe).
