Cheese and chive muffins

    cake flour
  • 20

    baking powder
  • 3
    ml
    mustard powder
  • 2
    ml
    salt
  • 30
    ml
    sugar
  • 75
    g
    mature Cheddar cheese, grated
  • 50
    ml
    chives, chopped
  • 300
    ml
    milk
  • 1
    large egg, lightly beaten
  • 60
    g
    butter, melted
 

Method

20-25 minutes
 
1. Sift together the dry ingredients and add the sugar, cheese and chives. 2. Combine the milk, egg and butter. 3. Make a hollow in the centre of the dry ingredients and pour in the liquid mixture, stirring until just combined. 4. Spoon the batter into a greased muffin pan and bake in a preheated 200 ºC oven for 20 to 25 minutes. VARIATION Add 125 g crispy fried bacon bits or four slices of roughly chopped salami to the batter before baking, or simply substitute the chives with chopped parsley or spring onions.
