Charred tomatoes with basil

    medium ripe tomatoes
  • 10
    ml
    sugar
  • 5
    ml
    mustard powder
  • 4
    cloves garlic, crushed
  • salt
  • milled black pepper
  • 1
    lemon, finely grated peel
  • 6
    fresh basil sprigs, washed
  • 30
    ml
    olive oil
 

Method

 
Halve tomatoes. Place in a shallow roasting pan and sprinkle sugar, mustard powder, garlic salt, milled black pepper, grated lemon peel and basil leaves over. Drizzle olive oil generously over tomatoes. Bake at 180 ºC for 20 minutes. When softened, place directly under a hot grill and cook until tips are charred and lightly blackened. Serve at room temperature.
