Carrot and chickpea salad

    carrots, scraped clean and cut into julienne strips
  • 100
    ml
    raisins
  • 30
    ml
    sesame seeds, toasted
  • 420
    g
    chickpeas, drained
  • 30
    ml
    fresh parsley, finely chopped
  • 150
    ml
    French salad dressing
  • salt and freshly ground black pepper to taste
 

Method

 
Mix the carrots, raisins, sesame seeds, chickpeas, parsley and salad dressing in a mixing bowl. Season with salt and black pepper to taste. Chill until just before serving. Serves 10.
