Cardamom apricots and vanilla cream

  • 250
    ml
    white sugar
  • 12
    cardamom pods, crushed
  • 600
    ml
    water
  • 350
    g
    soft dried apricots
  • 1
    juice of a lemon
 

Method

 
Slowly heat the sugar, cardamom pods and water until the sugar has dissolved. Bring to the boil and simmer for one minute. Add the apricots and simmer for another five minutes. Add the lemon juice. Serve hot or cold with the vanilla cream. Serves 4-6.
