Carbonara pasta

Ingredients

    g
    cavatappi spiral pasta
  • 15
    ml
    olive oil
  • 3
    onions, sliced
  • 250
    g
    rindless streaky bacon, diced
  • 250
    g
    fresh button mushrooms, sliced
  • 4
    large eggs
  • 500
    ml
    grated Cheddar cheese
 

Method

Cook pasta in 4 litres of boiling salted water until al dente. Drain and set aside. While pasta is cooking, heat oil in a saucepan and fry onions for 2-3 minutes until transparent. Remove from pan and fry bacon until cooked. Return onions to pan along with the mushrooms, and cook for a minute. Add to the cooked pasta. In a separate bowl, whisk together eggs and cheese and pour over hot pasta. Stir for 2-3 minutes until the egg has coagulated. Season with salt and freshly ground black pepper and serve immediately. Serves 6.
