Caramelised red onion, rocket and goat's cheese wr

Ingredients

    ml
    olive oil
  • 2
    red onions, finely sliced
  • 45
    ml
    soft brown sugar
  • 45
    ml
    balsamic vinegar
  • 150
    g
    soft goat's cheese
  • 5
    flour tortillas
  • 50
    g
    rocket
 

Method

25 minutes
 
Heat oil in a frying pan, add the onions and fry over a low heat for 15 minutes until golden brown and caramelised.
Add sugar and vinegar and cook gently for 10 minutes.
Spread a little goat?s cheese on each tortilla, cover with onion and top with rocket.
Roll up and wrap in plastic wrap.
Repeat with the remaining tortillas and refrigerate for 30 minutes.
Cut each wrap into four at an angle before serving.
