Caramel mocha stars

Preheat oven to 180 ºC. In a large bowl, sift flour and bicarbonate of soda. Rub in butter until mixture resembles fine breadcrumbs. Then add sugar, syrup, egg yolk and coffee and mix in well. Turn mixture onto a floured surface and knead for 1 - 2 minutes. Cover and chill for about half an hour. Roll out on a floured surface to about 5 mm and cut out the star shapes. Place on a well greased baking sheet and bake for 10 minutes or until the biscuits are a golden colour. Leave to cool and spoon over the caramel chocolate. Makes 20 stars (10 cm wide).
