Calamari vinaigrette

  • VINAIGRETTE

    oil
  • 50
    ml
    lemon juice
  • salt and black pepper to taste

    mustard powder
  • 1
    ml
    Tabasco sauce
  • 10
    ml
    castor sugar
  • 20
    ml
    tomato sauce
  • pinch paprika
  • 400
    g
    frozen calamari
 

Method

Blend all the ingredients for the vinaigrette sauce and set aside. Remove any hard pieces in the calamari. Cut the calamari into rings, if desired. Pour boiling water over it to allow it to defrost. Drain and stir-fry for a few seconds in heated butter. Add the sauce and heat until the sauce is hot and the calamari just tender. Be careful not to overcook, otherwise the calamari will become tough. Season with extra salt and black pepper, if desired. Serve immediately with extra slices of lemon. Serves 3-4.
