Ingredients (9)

VINAIGRETTE
50.00 ml oil
50.00 ml lemon juice
salt and freshly ground black pepper — to taste
5.00 ml mustard — powder
1.00 ml Tabasco sauce
10.00 ml castor sugar
20.00 ml tomato sauce
paprika — ground
400.00 g calamari — frozen

Method:

Blend all the ingredients for the vinaigrette sauce and set aside.
Remove any hard pieces in the calamari. Cut the calamari into rings, if desired. Pour boiling water over it to allow it to defrost. Drain and stir-fry for a few seconds in heated butter. Add the sauce and heat until the sauce is hot and the calamari just tender. Be careful not to overcook, otherwise the calamari will become tough. Season with extra salt and black pepper, if desired. Serve immediately with extra slices of lemon. Serves 3-4.
