Calamari salad

Ingredients

    g
    long-;grain rice, uncooked
  • 3
    red chillies, sliced
  • 5
    ml
    sliced lemon grass
  • 30
    ml
    freshly chopped coriander
  • 2
    cloves garlic, crushed
  • 100
    g
    calamari tubes
  • 30
    ml
    lime or lemon juice
  • 15
    ml
    fish sauce
  • 5
    ml
    sugar
  • salt and white pepper, to taste
  • spinach leaves, shredded (or baby spinach leaves)
 

Method

20‑30 minutes
 
Steam or boil the rice, with the chillies, lemon grass, coriander and garlic for about 20 minutes or until tender. Stir. Cut the calamari tubes open and score the flesh lightly. Cut into 5 x 1 cm strips. Mix into the rice. Steam or boil for five minutes, empty the rice and calamari mixture into a large bowl. Stir in the lime juice, fish sauce, sugar and seasoning to taste. Set aside to cool, then serve on a bed of shredded spinach.
