  • 500
    g
    frozen calamari rings
  • 60
    ml
    olive oil
  • 200
    ml
    red wine
  • 2
    ml
    salt
  • 1
    ml
    lemon pepper
  • 5
    ml
    finely chopped oregano
  • 20
    ml
    finely chopped parsley
  • 100
    ml
    tomato purée
 

Method

about 20 minutes
 
Cook the frozen calamari rings in their own liquid until it has evaporated, about five minutes.
Add the olive oil and red wine, reduce the heat and simmer until the calamari just turns red, about three minutes.
Add the remaining ingredients and simmer over medium heat until a thick sauce forms, about 10 minutes.
Cool, then chill in the fridge. Serve cold.
