Cajun chicken breasts with sweetcorn and red pepper relish

    chicken breast fillets, scored
  • 15
    ml
    Cajun seasoning
  • 1
    lime or lemon, juice and zest
  • 15
    ml
    olive oil
  • RELISH
  • 2
    red peppers, seeded and finely chopped
  • 1
    red chilli, seeded and finely chopped
  • 15
    ml
    olive oil
  • 1
    small can sweetcorn, drained
  • 400
    g
    (1 can) chopped tomatoes
  • 15
    ml
    red wine vinegar
  • 2
    ml
    castor sugar
 

Method

20 minutes
 
Rub Cajun spices on the chicken, pour over the lime juice, zest and oil, cover and refrigerate for 15 minutes.
To prepare the relish, sauté peppers and chilli in oil until tender.
Add the sweetcorn and tomatoes, and season with red wine vinegar, castor sugar, salt and pepper to taste.
Bring the mixture to the boil and simmer for 3 to 5 minutes.
Remove from heat and keep warm or allow to cool.
Braai the chicken breasts over medium to hot coals for 3 to 5 minutes on each side, or until cooked through and the juice run clear.
Serve with warm or cold relish.
