Cajun turkey salad

Ingredients

    Dressing: coconut cream or plain yoghurt
  • 100
    ml
    mayonnaise
  • 5
    ml
    cajun spice (to taste)
  • 1
    kg
    Salad: cooked leftover turkey, thinly sliced
  • 250
    ml
    red, green and yellow peppers, cut into strips
  • 100
    g
    mangetout
  • 300
    ml
    canned pineapple pieces, drained
  • 150
    ml
    sultanas
  • 4
    chives, chopped
  • 50
    g
    assortment of salad leaves
  • 20
    ml
    sesame seeds for scattering
 

Method

 
Dressing Blend all the dressing ingredients and set aside.

Salad Using your hands, combine all the salad ingredients except the leaves and seeds. Place the leaves in a salad bowl, arrange the other salad ingredients on top and drizzle with the dressing. Scatter the sesame seeds on top.
