Caesar salad dressing

    anchovy fillets
  • 1
    egg
  • 2
    cloves garlic, crushed
  • 5
    ml
    Worcestershire sauce
  • 30
    ml
    red wine vinegar
  • 15
    ml
    lemon juice
  • 5
    ml
    Dijon mustard
  • 100
    ml
    olive oil
  • black pepper
 

Method

 
Drain, rinse and roughly chop the anchovy fillets. Place the egg in a large bowl with the garlic, Worcestershire sauce, red wine vinegar, lemon juice, mustard and anchovies and mix until smooth. Gradually whisk in olive oil and season with black pepper.
