Butter bean, feta and sun-dried tomato salad

    feta cheese, cubed

    olives, halved and stoned
  • 410

    butter beans, drained
  • 1
    clove garlic, crushed
  • DRESSING
  • 15
    ml
    olive oil
  • 15
    ml
    balsamic or red wine vinegar
  • 30
    ml
    fresh herbs, such as thyme, basil, origanum, chives, chopped
  • salt and pepper to taste
 

Method

 
Combine the sun-dried tomatoes, feta cheese, olives, butter beans and garlic. Mix well. DRESSING: Combine ingredients for dressing and pour over the salad. Chill well before serving. Serves 4
