Bully beef fritters

  • 500
    ml
    water
  • 30
    ml
    butter
  • 250
    ml
    cake flour
  • 300
    g
    bully beef, finely chopped
  • 4
    extra-large eggs, separated
  • salt and cayenne pepper to taste
  • oil for deep-fat frying
 

Method

 
Bring the water and butter to the boil in a saucepan. Add the cake flour and stir rapidly with a wooden spoon until the mixture no longer sticks to the sides of the saucepan. Remove from heat and add the bully beef. Stir in the egg yolks, salt and cayenne pepper. Whisk the egg whites until soft peaks form. Fold in the egg whites and fry spoonfuls of the mixture in the preheated oil until golden brown and done. Drain on paper towelling and serve hot. Makes 36 fritters.
