Bruschetta with roast tomatoes

Ingredients

  • selection of cherry tomatoes including baby rosa tomatoes
  • olive oil
  • brown sugar
  • slices of toasted bread such as sourdough bread or ciabatta
  • garlic cloves
 

Method

Arrange the tomatoes in a single layer in a roasting pan, drizzle with a little olive oil and roast rapidly under the oven grill until just soft. Sprinkle with a little brown sugar to cut the acidity, season with salt and pepper and serve on toasted slices of ciabatta or sourdough bread rubbed with garlic cloves.
