    butter
  • 200
    g
    uncooked dry brown rice
  • 1
    onion, finely chopped
  • 1
    green pepper, finely chopped
  • 1
    tomato, skinned and diced
  • 400
    ml
    chicken stock
 

Method

 
Melt the butter in a pan. Add the uncooked rice and stir-fry over moderate heat until the rice has puffed out and is pale brown. (Take care not to burn the rice.) Add the onion and green pepper and stir-fry for another minute. Add the tomato and stir-fry lightly before adding the chicken stock. Simmer slowly until most of the liquid has evaporated and the rice is soft. Add more liquid if necessary. Serves 6.
