    bicarbonate of soda

    castor sugar

    extra-large egg

    golden syrup, slightly heated

    boiling water
 

Method

Preheat the oven to 180 ºC (350 ° F). Spray a 22 x 11 x 7 cm loaf tin with non-stick spray. Sift the flour, salt, bicarbonate of soda, ginger and cinnamon together in a large mixing bowl. Cream the butter and add small quantities of the sugar at a time while beating continuously. Add the egg and golden syrup and beat well. Add the dry ingredients, alternating with the boiling water. Mix well. Turn into the prepared loaf tin and bake for 35-40 minutes or until the loaf is done. Cool slightly and turn out onto a wire rack to cool. Slice and serve with butter. Makes a medium-sized loaf.
