Broccoli with bacon

    broccoli
  • 250

    bacon
  • 50
    ml
    butter

    cake flour
  • 5
    ml
    mustard powder
  • 500
    ml
    milk
  • 1
    ml
    paprika
  • salt and pepper
  • 2
    large eggs
  • 100
    g
    Cheddar cheese, grated
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Cook the noodles in rapidly boiling salted water until soft. Drain well and turn into a serving dish. Break the broccoli into smaller florettes and boil until nearly soft. Drain well and spoon over the noodles. Fry the bacon until browned, then cut into smaller pieces. Sprinkle over the broccoli. Melt the butter, add the flour and cook for 1 minute. Add the mustard powder and slowly add the milk. Stir continuously until the sauce boils and thickens. Season with paprika, salt and pepper to taste. Remove from the heat and add the eggs one at a time, stirring well. Add half the cheese and stir until melted. Pour the sauce over the broccoli and sprinkle with the remaining cheese. Bake until the cheese has melted and the dish is heated through. Serves 4-6.
