Broccoli salad with creamy curry salad dressing

    g
    broccoli, broken into florets
  • salt and freshly ground black pepper
  • 1
    large leek, cleaned and thinly sliced
  • 1
    red pepper, seeded and cut into julienne strips
  • oil
  • 5
    ml
    curry powder
  • 5
    ml
    turmeric
  • 10
    ml
    boiling water
  • 125
    ml
    thick mayonnaise
  • 125
    ml
    cream
  • toasted almonds or any other nuts for sprinkling
 

Method

 
Boil the broccoli in a small amount of water until just tender and firm. Alternatively, steam or microwave until tender. Drain and transfer to a dish. Season with salt and pepper. Rapidly sauté the sliced leek and pepper in a little oil until glossy. Mix with the broccoli. Place the curry powder and turmeric in a cup. Mix with boiling water and leave for 5 minutes. Mix the mayonnaise and cream and stir in the curry mixture. Pour the salad dressing over the vegetables and sprinkle with nuts.
