Brinjal, salami and mozzarella pizza

    readymade Italian tomato salsa

    tomatoes, sliced

    pizza salami, sliced

    mozzarella cheese, sliced

    fresh origanum, coarsely chopped
  • salt and milled pepper
  • origanum leaves to garnish
 

Method

 
Place pizza bases on baking sheets and brush lightly with 25 ml (5 tsp) olive oil and tomato salsa. TOPPING: Arrange tomato slices on top, making sure they cover pizza bases right up to edges. Arrange brinjals, salami and cheese in between tomato slices. Scatter chopped origanum over. Season with salt and pepper. Drizzle with remaining olive oil. Bake at 200 ºC for 15 to 20 minutes. Cut each pizza into three portions and serve immediately, garnished with origanum.
