60.00 ml fresh chillies — 573
2.00 aubergine — thinly sliced
2.00 tomatoes — green or red, sliced
1.00 red pepper — cubed
4.00 eggs
4.00 pastrami — slices
4.00 cheddar cheese — slices
2.00 bread — health or rye, sliced, buttered

Method:

In a non-stick frying pan, heat half the oil and fry brinjal until brown. Remove from the pan and drain on paper towel. In the same pan, fry green/red tomatoes
and red pepper, remove from heat and set
aside, keep warm. In another frying pan heat remaining oil and fry eggs as desired, set aside. On 2 serving plates, arrange slices of health or rye bread, top with layers of brinjal, tomato, red pepper, pastrami, cheese and fried egg. Repeat the layers ending with an egg. Serve immediately with health bread.
