Braised courgettes and leeks

Ingredients

  • 250
    ml
    vegetable or chicken stock
  • 8
    courgettes, halved lengthways
  • 8
    baby leeks, halved lengthways
 

Method

 
Heat stock in a pan.
Add courgettes and leeks and simmer until cooked through.
Add a little more stock as and when you need it.
Season to taste and serve.
