Braised cabbage with raisins

    ml
    butter
  • 2
    onions, chopped
  • 800
    g
    cabbage, cut into quarters,stema removed and diced
  • 80
    ml
    seedless raisins, soaked in warm Rooibos tea
  • grated nutmeg, to taste
  • salt and ground pepper to taste
  • 125
    ml
    salted peanuts
 

Method

Melt the butter in a large saucepan and braise the onion until soft and translucent, but not brown. Add the cabbage and stirfry for 2 to 3 minutes. Add 50ml water and stirfry until the cabbage is tender, but not wilted. Season lightly with nutmeg, salt and pepper. Drain raisins and stir into cabbage. Dish into a warm serving dish and sprinkle peanuts over.
