  • Basting sauce

    spring chickens
  • 50
    ml
    butter, melted
 

Method

 
Mix all the ingredients for the basting sauce 24 hours in advance. Brush the chickens (about 750 g each) with the melted butter and then with the sauce. Braai over medium coals, brushing with the sauce every time the chickens are turned. Alternatively, roast the chickens in the oven. Preheat the oven to 160 ºC (325 ºF) and spray a large oven pan with non-stick spray. Brush the chickens with the melted butter and then with the sauce. Transfer to the oven pan and bake for 30 minutes or until done and golden brown. Serve with roast potatoes and a fresh green salad. Serves 3-6.
