Bourbon sauce

  • 30
    ml
    custard powder
  • 3
    egg yolks
  • 600
    ml
    milk
  • 30
    ml
    castor sugar
  • 50
    ml
    bourbon (or Scotch whisky)
 

Method

 
Make a thin paste with custard powder, egg yolks and a little milk. Bring remaining milk to boil. Pour onto egg yolk mixture, stirring or whisking continuously. Return mixture to saucepan and cook gently for a minute or so until it thickens, but don't allow to boil. Stir in bourbon.
