Blueberry and banana muffins

Ingredients (10)

1 cup sugar
1/2 cup butter — softened
2 eggs
5 ml vanilla — essence
1,5 cup flour
1 tsp baking soda
1/2 tsp salt
3/4 cup banana — mashed
1/2 cup yoghurt — full cream
1 cup blueberries — frozen

Method:

Preheat oven to 180°C.

First off, cream the sugar and butter in an electric mixer. Add the eggs one at a time and beat until creamy. Add the vanilla essence and mix through.

Add the flour, baking soda, salt, banana, yogurt and blueberries. Mix until just combined.

Scoop batter into muffin tins and bake for 15 – 20 minutes.
